Columns you named
To do, in progress and done is the default. Rename them, add one, take out the column you never used.

Steps, not tickets
A step is a line of text you drag from one column to the next. Nobody is assigned, nothing is estimated in points, and no one expects a status update on Friday.

Done stays on the board
Finished steps keep their own column with a line through them, which is all the progress bar a project like this needs.

Can I switch Projects off?
Yes. The library in Settings has a switch beside Projects, and turning it off takes it out of the sidebar, the search and the Today screen. The other 26 switchable modules work the same way.
Does Projects sync between the Mac and the iPhone?
Yes, once iCloud sync is unlocked for $14.99, paid once and covering the Mac and the iPhone together. Until then Projects keeps its data on the device you typed it into, and it goes nowhere else.
